I was too hungry to bother to take a good picture. We're just lucky I remembered a picture at all. These were pretty good. Not exactly my favorite, but a nice change of pace. I started with a recipe, but its mostly just simple cooking concepts so I opted not to keep it. I'm pretty sure I'll remember enough to wing it, and if not, there's always the internet. There's a lot of room to experiment with this recipe, so to anyone who likes peppers a bit better than I do, I highly recommend having some fun. Also this was baked, but I bet you could grill them to keep house temps down during Summer.
So I'm not sure what happened, these are usually very "cute" with the meat stuffed into the cute little cup-shaped pepper. I'm used to them being hamburger and uncooked rice (with salt & pepper and maybe onions?) mixed and stuffed into the pepper shell. Tomato sauce over the top and baked until done. Looks like you've added cheese? - Did it taste like pizza?
ReplyDeleteThe recipe called for sauteing onions,garlic, and cilantro or parsley in oil, then browning meat in it, seasoned with cumin, salt, and pepper, then adding tomato sauce and chicken broth (the meat was originally turkey but I used hamburger) and then stirring in cooked rice. All of that was then stuffed into the cleaned out pepper half and the rest of the chicken broth was poured into the bottom of the baking dish the peppers were sitting in. It was covered while baking. I think the cute factor was lost by a) having abnormally shaped bell peppers to begin with and b) the chicken broth in bottom made them rather soggy after baking. Oh yes and then the recipe did have me add shredded cheese on top after they came out of the oven.
